A weekly ritual
Pie crust
Prepared to perfection
Filled with any number of things, 
meat, vegetables, gravy
And, of course
Apples

Good flour
Salt
Shortening 
Iced water
It must be cold
the dough
handled only as much as necessary 
to keep the warmth of your hands from 
Intruding on the shortening, coated with flour
Cut into bits with simple table knives
No fancy tools 
Just knives
A bowl
A beautiful wooden rolling pin 
And a tin

Taught by my mother 
Remembering my mother
Using her rolling pin
Still
